Ok, I could not help but reference the Beck song Where It’s At. Yes, I am weird; I can stop singing 2 Smoke Chickens and Microphone is Where It’s At. But enough about my singing issues lets get down to Philip’s Smoke Chicken Recipe.
-2 Small Whole Chickens
-3/4 cup chopped fresh Rosemary
-6 cloves minced garlic
-1/2 cup olive oil
-Kosher Salt and Fresh Cracked pepper to taste
Pour Olive Oil all over the chickens making sure to get every inch and rub underneath the skin too. Then take the Rosemary and Garlic and rub that all over chickens. Now get your grill around 225-250 degrees set up for indirect cooking. Soak your wood chips in water for 30 minutes and then place inside smoker box (replenish as needed). Put the Smoker Box by Cave Tools(review of this product coming soon)directly over heat while you place the chickens in the area of the grill where they are not directly over the coals and make sure they are right side up
Cook for about four hours or until internal temp reaches 165.
