Flourless Peanut Butter Cookies

This is one of my favorite flourless recipes. In just 20 minutes I can whip up a tray of delicious hot cookies! Super for when your kids bring home unexpected guests:)


1 cup of Laura Scudder’s Organic Smooth Peanut Butter

1 cup of  Viva Labs Organic Coconut Sugar

1 large egg slightly beaten

1 teaspoon Simply Organic Pure Vanilla Extract

1 teaspoon Himalayan Crystal Salt Coarse


Here are few fun ingredients to jazz up your cookies. You can add:

1/4 cup of Ghirardelli Chocolate Mini Semi-Sweet Chocolate Baking Chips

Instead of salt sprinkle this on top Roasted Peanut, Granulated Topping –


Preheat the oven to 350 degrees. In a medium bowl, combine peanut butter, sugar, eggs & vanilla extract.   Spoon 1 tablespoon of the mixture onto a cookie sheet placing them 1 inch apart.  Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies.(see photo) Before placing the cookies in the oven sprinkle coarse salt on top.

Bake for 10 minutes or until they are golden brown. Remove them from the oven and place on a cooling rack to cool.  Grab yourself a cold glass of milk and enjoy.
