Hearty Vegetable

This time of year we spend hours in the kitchen cooking gourmet meals but sometimes the simplest ingredients can make the most delicious meal. Here’s one of our families favorites. One pot and easy clean up too. 

  • 4 cups fresh vegetable stock
  • 4 cups diced tomatoes
  • 1 tbsp. chopped fresh basil
  • 1/2 tsp. oregano
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1/2 onion, chopped
  • 3 zucchini, chopped
  • 1 cup peas
  • 3 cloves garlic, minced
  • ½ tsp. thyme
  • salt and pepper to taste
  • 1 1/2 cups elbow macaroni pasta


In a large pot, combine all the ingredients except for the pasta.  Simmer over low heat for at least one hour, or until vegetables are tender. I like them a little on the tough side so I simmer for about 45 minutes.

After your veggies simmer add the pasta and bring back to slow simmer. Cook for another 20 minutes, or until pasta is at desired consistency.

Bake or purchase some crusty bread & Enjoy!
