This recipe is another one of our kid’s favorites. It is super simple to make, easy to clean-up and I usually have leftovers for the next day’s lunch. The best part of all it is extremely healthy and a wonderful source of protein.
Prep: 15minutes Cook Time: 45 minutes
2.5 lbs Boneless Skinless Chicken Thighs
1 Large Cooking Bag ( I get mine at the Dollar Tree)
8 carrots peeled and chopped
3 small onions chopped
6 small red potatoes chopped skins on
2 packets of your favorite Italian Dressing Packets( I use Good Seasons Italian Salad Dressing and Recipe Mix)
2 Tablespoons Olive Oil
1 5qt Roasting Pan
Let’s Get Cooking:
Preheat your oven to 350`. Take chicken out to, and place in a large bowl pour in 1 tablespoon of olive oil and then evenly sprinkle over the Italian Seasoning packet.(set aside) Now, take out another large bowl toss in all of your chopped veggies and 1 tablespoon of olive oil; coat veg then sprinkle one packet of Italian Season over the veg making sure to coat all the veg. Get out your roasting pan lined with foil, put in the large cooking bag pour you vegetables in first make sure they are placed evenly throughout the pan. Now, place your chicken thighs on top of the vegetables. Close the bag make a few small slits at the top to let the steam out. Place it in the oven for 45mins.
