Since Philip & I are on a NO MEAT fast(do I seem a little bitter here:)  I needed to come up with quick & simple meat meals for the kids.  There is some prep involved if you plan to make your meatballs & sauce which I did. If you want to go a quicker route, you can find a variety of delicious tasting frozen meatballs and fabulous jarred sauce at your local grocery store. For time purposes the recipe below I am using store bought items. A healthy dinner in minutes.

Ingredients: 

2 large cans of Muir Glen Organic Tomato Sauce(add your favorite spices)


1 bag 10.5  Zesty Italian Meatless Meatballs

1/2lb Mozzarella Cheese( I prefer BoarsHead)

1 loaf french bread

1T  Organic Basil

1t CRUSHED RED PEPPER FLAKES

1 can Organic Diced Tomatoes – Fire Roasted – 14.5 oz (optional)

grated parmesan

Directions:

Pour the sauce into your sauce pan add your favorite spices. Allow it to cook for about 10 minutes, now add your frozen meatballs. Cook for another 20 minutes on medium. Take out your french bread and slice in 2inch slices. Now, it’s time to build your sub. I prefer to cut the meatballs in half before placing them on the bread. I use two meatballs on each slice, I top with three tablespoons of sauce, once slice of mozzarella and few diced tomatoes. Place your sub in the broiler or toaster oven until cheese is melted. Once you remove your subs, sprinkle with red pepper & basil.  Dinner in 30 minutes.
