I love one pan meals and our Pesto Pork with Roasted Veg is a perfect addition to your one pot meal recipes. In 45 short minutes, you’ll have a low-carb healthy meal even finicky eaters will enjoy.
2lb lean pork loin
2 large red onions
1/2 pint sweet cherry tomatoes
Pre-heat your oven to 425. Then take out 2 large stainless steel bowls. In the first bowl throw in all of the roughly chopped vegetables; gently pour olive oil over the veg, then sprinkle some salt & pepper, now toss ensuring all vegetables are nicely coated. In the second bowl place pork loin in and again coat with olive oil, sprinkle the entire packet of pesto seasoning on the pork. Rub the seasoning all over the pork making sure every inch is covered with oil & seasoning. Next, take out an oven safe frying pan(this is one of our favorites( Cuisinart 622-36H Chef’s Classic Nonstick Hard-Anodized 14-Inch Open Skillet) place 2Tspoons of oil in the pan, get the pan pretty hot and then place your pork loin in, browning on each side. Now, it is time to throw in the veg place evenly on each side of the pork. Place in the oven and wait, 20 to 25 minutes per pound. And that’s you’re done!
