Philip’s Bacon Green Chili Stuffed Burgers served with Queso Fresco Grilled Corn

– Small can of green chili (whatever desired heat)


-4 strips of bacon

-1 medium onion

-2 cloves of garlic

-1 cup of sharp cheddar cheese

-3 pds chuck

-Burger Buns

 

Dice bacon and then cook in pan on medium heat.  Once browned, put on paper towel.  Cook the onions in the bacon fat until brown and in the last 2 minutes, add chili’s and garlic.  Remove from pan and let cool.  Once cooled, form as many thin patties as you can.  Add the bacon to the cooled onion mixture and add sharp cheddar cheese.  Take one of the patties and put slight indent in the middle.  Add TBSP of onion/chili/cheese mixture and then place another patty on top. Crimp edges to insure filling does not come out while cooking.  Once completed, brush burgers with vegetable oil and cook on a very hot grill.  Serve immediately on buns of your choice and enjoy!  (I also broiled additional cheese on top of burgers after cooking for massive cheesiness but will leave that up to you)
