Summer is HERE in TX and the corn is a plenty. I love grilled corn; I especially love the char on the kernals and the rich flavors you get from the smoked wood. One of my favorite recipes is Quesco Fresco Grilled Corn it’s easy to make and the flavors are perfecto!
6 ears of corn
Pull the husks back and remove all the corn silk. (tip: use a toothbrush or a rubber band makes removal so much easier)
Roll husks back over corn and submerge in a large bowl of water for 15 to 20 minutes.
Make sure while your prepping you’re corn the grill is getting nice and hot (add applewood or cherrywood for extra flavor)
Remove your soaked corn and place on a towel to remove excess water.
Now, it is time to place it on the grill!
Grill for 20 to 25 minutes with grill cover closed. Turning your corn every 5 minutes.
Remove the corn let cool enough so you can pull the husks back. Evenly apply a tablespoon of butter to each ear. ( I also add garlic powder and dried cilantro)
Finally, it’s time add Queso Fresco as little or as much as you like!
