semi-homemade carrot cake


I love to bake but I do not always have the time to do so from scratch. Semi-Homemade recipes help busy moms create beautiful cakes in the fraction of the time. Please share some of your favorite Semi-Homemade recipes in the comment section.


Carrot Cake

1 Box of Carrot Cake w/o raisins (follow the directions on the box) plus 1 teaspoon of coconut oil

1/2 cup of Sun Maid Golden Raisins-15 oz

2 shredded carrots

1/3 cup Diamond Shelled Walnuts, 10-Ounce (optional) Sophia is not fan of walnuts:)

Gently fold in raisins & shredded carrots into cake, mix. Follow baking, instruction on box.


Cream Cheese Icing

12 oz of softened cream cheese

1 stick of softened unsalted butter

3 cups Wholesome Sweeteners Fair Trade Organic Powdered Sugar, 16 Ounce Pouch

1 teaspoon of vanilla

1 tablespoon of milk ( use more if you like your icing thinner)

Add cream cheese & butter to your bowl. Whip with a mixer until creamy, add vanilla and add powder sugar one cup at a time. Add milk and continue to whip until it is the consistency you prefer.

Make sure cake is cool before icing.

Grab a cold glass of milk and enjoy!
