Slow Cooker Ancho Beef 

1 cup cilantro

2 onions quartered

4 plum tomatoes quartered

4 large cloves garlic

2 dried ancho chiles seeded

1 TBSP paprika

1 TBSP Cumin

1 tsp cayenne

1 tsp

2 lbs chopped stew meat

Kosher salt to taste

4 cups Beef/Vegetable stock
Get a heavy bottomed skillet and heat to med-high. Put the ancho chiles in pan and press down with your spatula, cooking for 10 seconds.  Remove from pan and let cool.  Then put onions, plum tomatoes and garlic (with skin still on) place in pan and cook for 5 minutes.  Take out of the  pan and put chiles, onions and tomatoes in your blender.  Take the skin off of garlic and add to blender as well.  Blend until smooth.  Take blended mixture and run through a strainer, pushing through with a spoon into slow cooker.  Add rest of ingredients and cook for 6 hours.  Serve hot with white rice.  Enjoy!
