Thai Lime Coconut Chicken Soup

Ingredients:


3 cups chicken stock

juice of three limes

1 Tbls of green chilies( you can go hotter with Thai Chiles)

2 cloves garlic, crushed

One 3-inch piece fresh ginger, peeled and cut into 4 chunks

1 stalk lemongrass (white part only), cracked open with the flat side of a knife

2 1/2 cups shredded cooked chicken

1 half can of coconut milk

One 8-ounce can straw mushrooms, rinsed & chopped

2 tablespoons Thai fish sauce

1 1/2 teaspoons coconut sugar

zest of one of the limes

salt & pepper to taste

1/4 cup chopped fresh cilantro leaves, for garnish

Directions
Bring the stock to a boil over medium heat in a soup pot. Add the lime zest, chiles, garlic, ginger and lemongrass. Lower the heat to medium-low; cover the pot and gently simmer to infuse spices into the broth, about 10 minutes.
Uncover the pot and stir in the chicken, coconut milk, mushrooms, fish sauce, sugar and lime juice. Simmer to heat the chicken through, about 5 minutes. Sprinkle with salt and pepper. Make sure to remove ginger before serv ing. Ladle the soup into a soup a large bowl. Garnish with the cilantro.

  1. That sounds delicious!!!! All I need is the coconut milk(which is different from coconut cream right?), all I need to know is what are green chillies? I’m making this!!!

    1. Yes coconut milk is different and can be found in most groceries. The green chilies can be found in the taco aisle in a small can. I put them in a ton of recipes nice flavor and not hot.

  2. Yummy! I love chicken coconut soup! Your recipe looks so great. Unfortunately, my husband and boys dislike the coconut but to me – I don’t mind at all. I’ve pinned this for the future so I can make this 🙂

  3. OK so this looks and sounds delicious lol. I have been making broccoli soup with coconut milk. But this kinda blows past that. This is healthy and cheap. Two things I always try to look for. Thanks for sharing!
