We ALL love mussels but we never had the courage to make them at home until now! We read over several different recipes and decided to created our own. Tuscan Style Mussels. Below you will find our easy to follow recipe.


4 lbs of Fresh Mussels (Costco is our go to place)

2 cloves of elephant garlic

3 spring of thyme

1 cup Pinot Grigio or 8 oz Stella Artois

2 tablespoons of olive oil

1 meyer lemon juiced

1 cup chicken broth

1 teaspoon creole seasoning

1 roma tomato seeded then diced

1 tablespoon unsalted butter

1/2 bunch Italian parsley chopped



First and most importantly scrub the mussels with a vegetable brush to remove sand & barnacles. If any of the mussels are open or cracked discard them. In a large pan pour in olive oil and begin to saute garlic & thyme. Then add your mussels and toss in garlic mixture.  Add lemon juice, wine or beer, chicken broth & creole seasoning. Cover and allow them to steam for 5 to 6 minutes.  Now, it’s time to toss in the roma tomato, 1/2 bunch of chopped Italian parsley & tablespoon of butter. Steam until butter is melted.  Pour mussels in a large serving bowl garnish with a sprig of thyme. PS do not forget a great loaf of crusty Italian bread; you need to sop up that delicious juice with something:)
